Do you ever get bored of basic oatmeal? Try this rich and chocolatey polenta porridge instead!

YIELD:1SERVING
INGREDIENTS
1¼ cup (310ml) nondairy milk, plus more for serving
½ tsp vanilla extract
1 tbsp maple syrup
pinch of salt
1¼ tbsp unsweetened cocoa powder
⅓ cup (55g) dry polenta
1 tbsp vegan protein powder (optional)
1 to 2 tbsp vegan dark chocolate chips
1. In a small saucepan on medium heat, bring the milk, vanilla, and syrup to a simmer.
2. Meanwhile, in a bowl, combine the salt, cocoa powder, polenta, and the protein powder, if using.
3. Add the combined dry ingredients to the simmering milk, whisking throughout. Let the mixture cook on medium for 2 to 3 minutes, or until nicely thickened. Be sure to stir frequently.
4. Cover the pot with a lid and remove from the heat. Allow the porridge to sit and steam for 3 to 5 minutes, or until the polenta is fully soft.
5. Serve topped with dark chocolate chips and an additional splash of nondairy milk.
